Chicken, Broccoli, and Rice Casserole

Chicken Broccoli and Rice Casserole


2 ½ C. Frozen Broccoli, cooked and drained

12-20 onces cooked chicken in bite sized pieces

(You have the above already in bags in your freezer)

2 C. cream of chicken soup

2 C. milk

1 C. Mayo

2 tsp lemon juice

¼ - ½ tsp. garlic powder

2 C. cheese

1 C. crushed Ritz crackers (I don’t use them)


Spray casserole dish with vegetable oil spray.

In bowl: mix soup, mayo, lemon juice, garlic, and milk. Mix in rice, broccoli, and chicken. Place in casserole dish. Cover with cheese (and crackers if you like). Bake for 25 minutes at 375 degrees to melt cheese and heat through…can do this in microwave too.
