Ingredients

  • 1 loafabout 15oz. French Bread, cut into 1 inch cubes
  • 8 large eggs
  • 2 cups milk2% or whole milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar
  • 2 tbsp maple syrup
  • 2 tsp vanilla extract

The Night Before:

  • Lightly grease a 9x13" casserole dish and place cubed bread in an even layer in dish. Set aside.
  • Whisk together the eggs, milk, heavy cream, sugar, maple syrup and vanilla extract in a large bowl until mixture is pale yellow. Pour mixture over the bread, trying to coat each piece of bread.
  • In a separate small bowl combine the topping ingredients and use a fork or pastry cutter to combine, until mixture is coarse and crumbly. Sprinkle mixture evenly over bread. Wrap tightly with plastic wrap and place in fridge overnight (or for at least 4 hours).

In the Morning:

  • Preheat oven to 350 degrees F. Unwrap casserole dish and bake for 50 to 60 minutes, until middle of casserole is set. If the top begins to brown too much, lightly lay a piece of foil over the top and continue baking until finished.
  • Let sit for a few minutes before slicing and enjoying!

Notes
If desired, you can drizzle a powdered sugar glaze over the top of the warm casserole. Combine 1 cup of powdered sugar with 1 tbsp of milk and whisk to combine. Drizzle over casserole.

Ribbon Cake

Ribbon Cake (Jackie's recipe)

1 pkg lime jello
1 pkg cherry jello
15 oz. applesauce
24 graham crackers
1 envelope Dream Whip
3 Tbsp. powdered sugar

Place jello in two separate bowls with 3/4 cup applesauce in each bowl. Stir jello and applesauce well.
Place 3 graham crackers on cake plate and add a layer of jello-applesauce, rotating the color until you use all the graham crackers.
Top with the Dream Whip, omitting the vanilla and adding the powdered sugar to the whipped topping.

Ingredients
2 cups whipping cream
6 cups milk
1 teaspoon vanilla
1 (12 ounce) package white chocolate chips
Garnish:
Whipped cream
Candy canes (optional)

Directions
1.Stir together the whipping cream, milk, vanilla, and white chocolate chips in a slow cooker.
2.Cover and cook on low for 2 to 2 1/2 hours, stirring occasionally, until mixture is hot and chocolate chips are melted. Stir again before serving. Garnish with whipped cream and candy canes, as desired.

It needs the whipped cream. A little nutmeg sprinkled on top is nice, too. You can also crush up the candy canes until they are fine and then sprinkle them on top. For a little more than a serving, try below:

1/4 C. whipping cream
3/4 C. milk
1/8 tsp. vanilla
1.5 oz. white chocolate chips

Pecan Pie

Most pecan pie recipes I've found call for 2 cups of sugar - one cup of corn syrup plus one cup of either granulated or brown sugar - which results in pies so sweet they can give you a sugar headache after a couple of bites. This pecan pie recipe has less sugar than most, but the molasses, butter and vanilla bring out the wonderful flavor of the pecans. As with any nut used in cooking, use only the freshest of pecans.

Ingredients
2 eggs, slightly beaten
1 cup light corn syrup
1/4 cup brown sugar
1 Tbsp molasses
2 Tbsp melted butter
2 Tbsp flour
1/4 teaspoon salt
1 teaspoon vanilla
1 1/4 cups pecans, coarsely chopped

1 9-inch pie shell, chilled for an hour if freshly made, defrosted for 10 minutes if frozen. (See pie crust recipes.)

Method
1 Preheat oven to 375°F. Spread pecans along the bottom of the pie shell. Mix the remaining ingredients and pour over pecans. The pecans will rise to the surface of the pie.

2 Bake at 375°F for 45-50 minutes until the filling has set. About 20 minutes into the cooking you may want to use a pie crust protector, or tent the edges of the pie crust with aluminum foil to prevent the pie crust edges from burning.

3 Remove from oven and let cool completely.

Serves 8.
