Mom’s Tub Butter

Make tub butter: in a blender place 1 cup water, 1 cup vegetable oil,  about 1 Tbls. Liquid lecithin. Blend well.  Add 1 pound softened butter and blend smooth.  You now have 2 pounds of butter. Divide into 4 containers. Keep one in the fridge. The rest in the freezer.
