4 Dynasty Shiitake Dried Black Mushrooms (or I just cut up 8 oz. of baby bellos)
1 package (5.29 oz) Saifun
1 chicken bouillon cube (or I used a tablespoon of my homemade vegetable broth mix)
1 Tbsp. Soy sauce
1 lb. lean ground turkey (or chicken)
1 clove garlic, minced or pressed
2 green onions and tops, thinly sliced on diagonal
1 medium carrot, coarsely shredded
1 tsp. sesame oil (I did not have)
Soak shiitake as directed by package (if you got dried stuff); drain, squeezing out excess liquid. Remove and discard shiitake stems; thinly slice mushrooms. Soak Saifun as directed by the package. Dissolve bouillon (if you are using it) in 1 cup boiling water. Mix in soy sauce. Heat large frying pan over high heat. Liquid coat inside of pan with cooking spray (I did not). Add turkey and garlic; stir-fry 6 minutes or until lightly browned and cooked through. Mix in saifun, mushrooms, green onions and tops, carrot, and bouillon mixture. Bring to a boil. Cook and stir 4 minutes, or until most liquid is absorbed. Remove from heat. Mix in sesame oil. Makes 4 servings, about 1 2/3 cups each.
Per serving: 341 calories, 21 g protein, 11 g fat, 34 g carbs, 558 sodium, 140 mg cholesterol
